Goat Camembert

Goat Camembert made in house.

Gina made a Camembert with goat milk, and, after a month and a half aging,  it turned out quite good.

It looked like Camembert, but the taste was a little bit more tangy and less creamy.

The challenge was to find a wine to pair it to.

We tried several, and the Bordeaux Rouge was the best (Château Florie Aude Cuvée Espessas 2015) .

My guess is that Camembert is made close to where Chinon wine is made, so according to the rule “What grows together, goes together”, Cabernet Franc should work…and the Bordeaux we had, had Cabernet Franc as well as Cabernet Sauvignon and Merlot. Regardless of why, it was good!

Camembert de chèvre fait maison:

Gina a fait un Camembert avec du lait de chèvre, et après un mois et demi d’affinage, il était plutôt bon.

Il ressemblait à un Camembert, mais le goùt était un peu plus acidulé et moins crémeux.

Le défi a été de trouver un vin pour l’apparier.

Nous avons essayé plusieurs vins, et un Bordeaux Rouge était le meilleur (Château Florie Aude Cuvée Espessas 2015).

Je suppose que le camembert étant fabriqué pas loin de Chinon, et d’après le dicton “Ce qui grandit ensemble, va ensemble”, le Cabernet Franc devrait convenir. Le Bordeaux que nous avions bu avait du Cabernet Franc, du Cabernet Sauvignon, et du Merlot. Et c’était délicieux !
